Don’t throw out those greens! Pesto Pasta

Let's get rid of that excuse for buying greens! Folks, if your salad greens are about to go bad and you aren't in the mood for a salad, this recipe is well received even by kiddos as it tastes like alfredo sauce, is healthy as can be, and gets rid of three cups of greens if you forgot about them in your fridge! If they don't like that it's green, psychology is 90% of raising kids, tell them it is Shrek pasta or Hulk pasta and only cool superheros eat it and you're good. Also... this produce is MAGIC for your health. MAGIC. Better than any drug on the market for reducing the risk of developing all kinds of illnesses- cancer, diabetes, high blood pressure. Literally name the illness and greens help it.
1 c raw cashews
3-4 c packed greens
1/2 tsp salt
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder (bonus points if any of those spices are SMOKED as far as taste goes)
3 Tablespoons Nutritional Yeast
2T lemon juice or vinegar of choice (white wine or sherry work well)
nondairy milk or water to allow for easy mixing in blender or food processor
If needing to placate children, I would have 1/4 c of the liquid be half and half; even adding a tiny bit of dairy makes it easier to fool them/stimulates the dairy receptors so they think they are eating macaroni and cheese from a box.
Mix everything until liquid in blender or food processor.
AND... there are bean-based pastas (chickpea) that are gluten free and actually hold on to sauce better. It's a higher protein and higher fiber pasta to use and the change-up goes unnoticed with lots of sauce on board whereas it can be noticed more if it's just straight pasta.
